Sprouted Green gram masala




Ingredients:

Sprouted green gram - 2 cups
Coconut oil - 3 tsp
Mustard - 1 tsp
Curry leaves - 4-5 leaves
1/2 of one big Onion finely chopped
Tomato - 1 small finely chopped
Green chili - small 3 chopped
Turmeric powder - 1/2 tsp
Chilli powder - 3/4 tsp
Salt

Sprout preparation:

  • Soak the green gram in water for 8 hours (over night)
  • Drain the water completely
  • Store it in a container for 36 hours for the green gram to sprout
  • You can also store the sprouted green gram in the fridge up to 2 weeks



Preparation:

1. Heat oil in a pan. (Any cooking oil works, I used coconut oil)
2. Add mustard and curry leaves. Once the mustard pops, add finely chopped onions and green chili and sauté until the onion turns transparent.
3. Add salt, turmeric powder and chili powder and sauté for a min or until the raw smell of the chili powder disappears.
4. Mix the chopped tomatoes now and cook for another 2 mins.
5. Add the sprouts and sprinkle some water. Cover and cook in medium flame until the sprouts are cooked.
6. Serve as a side for rice and any gravy.



Optional: You can use chopped coriander leaves for garnishing once you turn off the flame.
