Pav Bhajji


Ingredients:

For bhajji:

Potato 1 big size cut into cubes
cabbage (white or purple) a small piece chopped
Beans 3 chopped
carrot 1 big chopped
Green peas 1/4 cup
Onion 1 medium finely chopped
tomatoes 2 small chopped
ginger garlic paste 1tsp.
red chillie powder 1tsp.
pav bhajji masala 3tsp.
amchur powder(dry mango powder) 1tsp.
kasoori methi little
salt

For garnishing at the end:

Butter 1tbsp.
coriander leaves chopped
1/2 of the medium onion chopped

Method:

1. Cook all the vegetables with little salt except onion and tomato in a vessel. Mash it really well. Keep aside.

2. Heat oil in a kadai. Add ginger garlic paste. Saute for few minutes till the raw smell disappears.

3. Add the chopped onions and saute till the onions turn golden brown. Now add tomatoes. Reduce the flame to medium from medium high.

4. Saute till the tomatoes gets cooked. Add the cooked vegetables to this with 1/2 cup of water and mix well.

5. Add all the powders and kasoori methi with little salt. (We have already added little salt).

6. Add water if necessary. Don't add too much water. The gravy must be thick.

7. Once the gravy is ready, transfer to a serving bowl, and add butter in hot gravy, along with coriander leaves and raw chopped onions.

8. Serve this bhajji with Indian pav. We can also have with hamburger buns toasted in butter. (Don't toast the bun too much. Toast just for 30 secs by applying butter on both sides in medium flame)
