Beef fry - Kerala Cuisine



Ingredients:

To pressure cook:

beef 1kg
turmeric powder 1tsp
coriander powder 1tsp
green chillie 2
salt
vinegar 1 tsp
fenugreek seeds 1 tsp
cardamom 2
glove 2

To saute:

onion 1 (medium)chopped
green chillie 1
curry leaves 5 leaves
ginger small piece finely chopped
garlic 3 finely chopped
turmeric powder 1/2tsp
coriander powder 1tsp
oil 1 tablesp.

Method:

1. Add all the ingredients given to pressure cook and cook till 5 whistles.

2. In a kadai, add 1 tablespoon oil. Add chopped onions and saute till the colour of the onion turns to yellowish brown.

3. Now add the chopped ginger and garlic and saute again for 5 mins till the raw smell of ginger and garlic disappears.

4. Add green chillie, turmeric powder and coriander powder and saute for few mins.

5. Add the cooked beef to this without the soup water and mix well. Fry this for 2mins.

6. Add half of the soup left in the cooker to this and stir cook.

7. After the water quantity reduces, continue frying the thick gravy. Add the remaining soup and cook till the water quantity reduces to form a thick gravy.

8. At this time add curry leaves and fry again. Continue frying this till the gravy becomes dry.

9. Fry till the colour of the receipe becomes dark brown. Garnish with coriander leaves. Serve with rice.
