Ingredients:
drumstick 1
brinjal 1
ladiesfinger 1
coconut grated 1/2 cup
turmeric powder 1/4tsp.
chillie powder 1 tsp.
sambar powder 1/2tsp.
tamarind small gooseberry size soaked in water
salt
cumin seeds 1/2tsp.
methi seeds 1/2tsp.
cumin powder 1/2 tsp.
onion chopped 1
coriander leaves for garnishing
Method:
1. Grind coconut, cumin seeds and tamarind to a fine paste. Keep aside.
2. Heat oil in a kadai. Add mustard seeds. Once it crackles, add methi seeds, chopped onion and curry leaves. Saute for 1 min.
3. Now add all the vegetables or any one of the above vegetable and saute for 2 mins.
Add water and salt and cover the kadai with a lid. Allow to cook.
4. Once the vegetables got cooked, add turmeric powder, chillie powder and sambar powder and cook for 1 min.
5. Add the grinded coconut paste to this and stir well. Add water if necessary. Allow to boil for 2 mins. Garnish with coriander leaves.
Serve with rice.
