Aappam


Ingredients:

Pongal white rice 2 cups
Idly rice 1 cup
urad dal 2 tsp.
methi seeds a pinch
coconut milk 1cup
sugar 3tsp.
salt

Method:

1. Soak rice, urad dal and methi seeds together and grind it to form a batter.

2. The water we use to wash the remaining batter in the grinder is poured into a vessel separately. The quantity may be 1 or 2 cups. Heat this diluted batter by stirring continuously. After sometime this dilute batter boils and raises up. At that time turn off the flame. This is the yeast, we add to the grinded batter.

3. Cool this yeast and add to the batter. Add salt and stir the flour well with the yeast.

4. Leave this for one whole night. Next day morning, add one cup coconut milk and 3tsp. of sugar to this and stir well.

5. Pour this in appam kadai and cover with a lid so that the bottom side will be cooked and the front side will be steam cooked. (Don't turn the appam, like we turn and cook the both sides of thosa.)

6. Serve with channa potato kurma or sambar or any non-veg gravy. Some would like to have this with coconut milk and sugar mixture. Even children like to have with cow milk and sugar mixture.
