Vegetable biryani


Ingredients:

long grained rice 1 cup
beans chopped 1/2cup
carrot chopped 1/2 cup
onion sliced 2 medium size
tomato chopped 2
green chillie 2
white cardamom 1
black cardamom 1
bay leaf 1
cinnamon stick 1 break into 2
clove 1
turmeric powder 1/4 tsp.
chillie powder 1 tsp.
coriander powder 1 tsp.
cumin powder 1 tsp.
coconut milk 1 cup(optional)
water 1 cup (if using only water, add 2 cups of water)
yoghurt 1tsp
salt
coriander leaves chopped one handful
pudina leaves 1/2 handful
ginger garlic paste 1 tsp.

Method:

1. In a kadai fry the rice in 1tsp. ghee and keep aside.

2. Heat a pressure cooker and add oil and cinnamon, aniseeds, bayleaf, cardamoms, clove and saute. Add gingergarlic paste and saute till raw smell disappears.

3. Add sliced onion and green chillie and saute till golden brown. Add chopped tomatoes. Saute till it gets cooked.

4. Add salt and stir well for few secs. Now add all the remaining powders and stir well in medium flame till raw smell disappears. Add coriander and pudina leaves and stir well. Add the yoghurt and mix well.

5. Add coconut milk and water to this mixture and add the fried rice into this.

6. Close the lid and pressure cook till 2 whistles.

Serve hot with onion raita or any chicken gravy or vegetable gravy.
