Theeyal


Ingredients:

brinjal 4
cucumber chopped 1cup
onion 3 chopped
green chillie 2
coconut grated 1 cup
chillie powder 2 spoons
coriander powder 1 spoon
salt
tamarind water 1 cup (gooseberry size tamarind)

Method:

1. Heat oil in a pan and fry coconut with little chopped onions. Fry till it becomes dark brown in colour.

2. Reduce the flame or if it is a heavy bottomed pan switch off the flame and add chillie powder and coriander powder and fry till raw smell disappears.

3. Make this coconut mixture into a fine paste in a blender. Keep this aside.

4. Heat oil in a pan. Add mustard, curry leaves and the vegetables and fry. Add tamarind water and little salt.

5. Cover the pan and once the vegetables got cooked, add the coconut paste and mix well.

6. Add water if necessary. Let it cook for 5-10 mins and off the flame

Serve for rice also called theeyal saatham(rice). Murungai keerai thoran is a best side dish for this receipe.

Note: You can add vegetables of your choice. Instead of vegetables you can add only onion and prepare this gravy. It also tastes good.
