Brinjal Vada curry



Ingredients:
paruppu (channa dal) vada
coconut - 1 cup
brinjal - 4
drumsticks - 3
turmeric powder - a pinch
chillie powder - 2 tspoons
jeera - 1 tspoon
garlic -2 cloves
curry leaves

Method:

1. Grind coconut with turmeric powder, chillie powder, jeera and garlic like a paste.

2. Cut brinjal and drumsticks into medium size pieces. Heat oil in a pan. Add mustard and curry leaves and add brinjal and drumsticks.

3. Fry for few minutes and pour water to cook. Close the pan and let it cook for 10 mins.

4. Once the vegetables got cooked add the coconut paste and mix well. Pour water if necessary.

5. Add paruppu vada to that and cover the pan for 2 mins and off the stove.
