Bitter gourd coconut curry


Ingredients:

bitter gourd 1 big
salt
oil
mustard
curry leaves

To make coconut paste:

grated coconut 1/2cup
jeera 1/2tsp.
turmeric powder 1/4tsp.
chillie powder 1/2 tsp.
garlic cloves 2

Make a paste of the above and keep aside.


Method:

1. Cut the bitter gourd into half and slice it. Deep fry this bitter gourd and keep aside.

2. Heat a cooker and add oil, mustard and once the mustard crackles, add curry leaves.

3. Add chopped onions and saute till golden brown. Add chopped tomatoes and saute again.

4. Now add fried bitter gourd to this and stir. Add the coconut paste to this and add salt.

5. Since we are going to pressure cook this, add necessary water. Close the cooker and pressure cook till 3 whistles.

6. This receipe will be little bitter, so bitter lovers can try this. Very good for diabetis patients.
