Ghee rice



Ingredients:

Long grained rice 2 cups
water 4 cups
cardamom 1 or 2
cinnamon stick 1 broken
cloves 2
fennel seeds or cumin seeds 1 tsp
black peppercorns 1 tsp
onions 1 big sliced
green chillie 4 or 5
butter (ghee) 2 tbsps
oil 2 tbsp
mint/pudina a handful
ginger garlic paste 1tsp
salt to taste

Method:

1. Heat ghee and oil in a heavy-bottomed pan . Add the whole spices and fry for a few seconds.

2. Add the onion slices and green chillie and saute for a few seconds. Lower the heat and add ginger garlic paste and saute on medium till the onions are transparent and the raw smell of ginger garlic paste disappears.

3. Add the rice and saute for a few seconds so that it mix well with the spices and onions. Pour the water and add the salt. Bring to boil. Now add pudina leaves. Once the water starts boiling, lower the flame and cook for about 15 minutes or till the rice is done. (No need to cover the vessel. Cook in very low flame.)

Serve hot with chicken gravies or veg gravies.
