Aviyal (Mix vegetables)


Ingredients:

raw banana 1
carrot (small) 1
brinjal 2
cucumber 1 medium size
yam a small piece
drumstick 1
snake gourd 1/2
mango 1/2 (instead of mango we can use tamarind or curd for sour taste)
jeera powder
coconut oil
curry leaves

for grinding:

green chillie 3
turmeric powder (grind these two coarsely and keep aside)

coconut 1 cup
jeera 1 tsp. (add these two in the same jar itself and grind coarsely)


Method:

1. Cut all the vegetables into long slices. Heat a pan and pour 2 tbsps. of coconut oil. Add green chillie - turmeric powder mixture and fry.

2. Now add all the sliced vegetables and mix well so that the green chillie mixture mixes well in these vegetables.

3. Add little water for the vegetables to cook, add salt and cover with a lid.

4. Once it got cooked add the grinded coconut and jeera mixture to it and mix well. Add jeera powder and mix again.

5. Add curry leaves and 1 spoon coconut oil above the curry and off the stove. Cover with a lid and leave for 5 mins.

6. After that mix once again and serve
