Brinjal Tomato chutney/curry- Andhra cuisine



Ingredients:

Brinjal - 5
tomatoes chopped- 2
garlic - 6
green chillies - 2
jeera - 1 teaspoon

Method:

1. Cut brinjal into slices. Heat 1 tablespoon oil in a pan. Add brinjal and fry in low flame by closing a lid. Stir often.

2. After the brinjal got cooked, place it in a bowl.

3. In 1 tablespoon oil add chopped onions and do the same.

4. Add this fried tomatoes in the bowl.

5. Now in hot oil add mustard, curry leaves, jeera, garlic, green chillies and fry well. Add this mixture into the same bowl.

6. Add salt and smash everything with a round spoon and serve.
